DocTR do not load Roboflow weights - that must be fixed otherwise there is security risk

@PawelPeczek-Roboflow I would like to fix this, can you guide me through it? From what I've seen in the DocTR inference code, it looks like we're not using the Roboflow weights, but rather the default ones, right?
